Newlyweds launch business starring classic family favourite
A NEW business serving up homebaked treats including a favourite English comfort food is the latest to join Mackay's food truck vanguard.
Spudz 'n' Stuff co-owner Katrina Anderson, who started the venture alongside husband Ashley, said coronavirus had brought their dream forward.
"I ended up leaving my job and a week later he (Ashley) lost his," Mrs Anderson said.
"We thought, gosh, we really have to do something."
The newlyweds revamped a trailer and set about creating a menu paying homage to their roots.
"My grandma actually taught me how to cook when I was a kid," Mrs Anderson said.
The main star of their new venture - the baked spud - was a favourite childhood food for her husband, who grew up in England.

All spuds come with cheese and sour cream and you can choose from a variety of fillings including bacon, mince and vegetarian.
"There is also a jackfruit version in the works," Mrs Anderson said.
"It's so strange, but when you cook it, it tastes like meat," she said.
Starting the business three weeks ago, Mrs Anderson said they hoped to one day take the truck on the road so they could travel with their 12-year-old son.
"We've had our ups and downs, there's a lot to learn when you throw yourself in but it's been fantastic," she said.
"All the customers have been so welcoming."
