MKR finale brings back memories of grand final brownie

FOLLOWING the My Kitchen Rules finale this week, we got a bit nostalgic and thought we'd share with you a recipe we used in our grand final - a delicious salted chocolate brownie. To create a delicious brownie, it's important to use a good quality dark chocolate with a high cocoa percentage.

INGREDIENTS: 360g unsalted butter 360g dark chocolate 6 eggs 2 tsp vanilla paste 500g caster sugar 220g plain flour, sifted pinch of salt.


METHOD: Preheat oven to 180 degrees. Line a large slice tray with baking paper.

In a large pot place a cup of water, bring to the boil and then reduce to a slow simmer.

Place the butter and chocolate in a bowl. Fill a saucepan part way with water and place bowl on top as a double boiler. Allow butter and chocolate to melt slowly.

In another bowl, whisk eggs, sugar and vanilla together until light, fluffy and mixture has doubled in size. Add half of the flour to egg mixture and then half of chocolate mixture and combine. Continue to mix all ingredients together.

Pour mixture into a pan and sprinkle with salt.

Bake for 20-25 minutes. You want to under bake it so it's fudge-like, not cooked all the way through. It should not crack on top.

Remove from oven and allow to cool completely before slicing. Store in the fridge.
